Instructions
  1. Prepare Homemade Sweet Chili Sauce: Combine 1/2 cup red chilies (seeded), 1/4 cup rice vinegar, 1/4 cup sugar, 1 tbsp fish sauce, and 1 clove garlic in a blender. Blend until smooth. Strain and set aside.
  2. In a bowl, combine all Marinade ingredients and toss with Shrimp. Let marinate for 30 minutes.
  3. Prepare Tempura Batter: Gently whisk together Cake Flour and Ice Water until just combined. Do not overmix. Stir in Egg Yolk.
  4. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  5. Dip each marinated Shrimp into the Tempura Batter, ensuring it's fully coated.
  6. Carefully lower the Shrimp into the hot oil and fry for 2-3 minutes, until golden brown and crispy.
  7. Remove Shrimp from oil and drain on a wire rack.
  8. In a bowl, whisk together all Sauce ingredients.
  9. Toss the fried Shrimp in the Sauce to coat evenly.
  10. Garnish with Black Sesame Seeds, Scallions, and Microgreens. Serve immediately.
