  1. Preheat oven to 400°F (200°C).
  2. Prepare the Garlic Butter: In a small saucepan, melt the clarified butter over low heat. Add the minced garlic and cook for 1 minute until fragrant. Stir in the white wine and lemon juice, simmering for 1 minute. Add the smoked paprika, salt, white pepper, and chopped chives.
  3. Prepare the Lobster Tails: Using kitchen shears, cut down the center of the lobster tail shell, being careful not to cut through the meat completely. Gently separate the meat from the shell and lift it slightly, leaving the tail attached at the end. Brush the lobster meat generously with the Garlic Butter.
