Instructions
  1. In a medium bowl, whisk together all Marinade ingredients.
  2. Add Shrimp to the Marinade, ensuring they are well coated. Marinate for at least 1 hour, or up to 4 hours, in the refrigerator.
  3. Preheat grill to medium-high heat. Lightly oil the grill grates.
  4. Thread Shrimp onto skewers.
  5. Grill skewers for 2-3 minutes per side, or until Shrimp are pink and opaque.
  6. While Shrimp are grilling, prepare the Beurre Monté. In a small saucepan over medium-low heat, whisk together 2 tablespoons of water and 1 tablespoon of Lemon Juice. Gradually whisk in the cold Butter, one cube at a time, ensuring each cube is fully emulsified before adding the next. Continue whisking until the sauce is smooth and creamy. Do not allow the sauce to boil.
  7. Remove from heat and stir in Chives and Dill. Season with Fleur de Sel to taste.
  8. Brush grilled Shrimp with Beurre Monté and serve immediately.
