Instructions
- In a medium bowl, whisk together all Marinade ingredients.
- Add Shrimp to the Marinade, ensuring they are well coated. Marinate for at least 1 hour, or up to 4 hours, in the refrigerator.
- Preheat grill to medium-high heat. Lightly oil the grill grates.
- Thread Shrimp onto skewers.
- Grill skewers for 2-3 minutes per side, or until Shrimp are pink and opaque.
- While Shrimp are grilling, prepare the Beurre Monté. In a small saucepan over medium-low heat, whisk together 2 tablespoons of water and 1 tablespoon of Lemon Juice. Gradually whisk in the cold Butter, one cube at a time, ensuring each cube is fully emulsified before adding the next. Continue whisking until the sauce is smooth and creamy. Do not allow the sauce to boil.
- Remove from heat and stir in Chives and Dill. Season with Fleur de Sel to taste.
- Brush grilled Shrimp with Beurre Monté and serve immediately.
