In a bowl, gently combine Burger Patties ingredients. Form into 4 patties, being careful not to overwork the meat.
In a saucepan, combine all Whiskey River BBQ Sauce ingredients. Bring to a simmer over medium-low heat and cook for 30 minutes, stirring occasionally, until reduced and thickened. Remove from heat and let cool.
Preheat grill to high heat.
Grill patties for 3-4 minutes per side for medium-rare, or to desired doneness.
During the last minute of cooking, place cheddar cheese on top of each patty to melt.
Lightly toast brioche buns.
Spread Whiskey River BBQ Sauce on both halves of each bun.
Assemble burgers: bottom bun, arugula, patty with cheese, caramelized red onion, bacon, top bun. Serve immediately.
