Instructions
  1. In a bowl, combine all Marinade ingredients and marinate the Chicken for at least 4 hours, or overnight.
  2. In a separate bowl, combine all Breading ingredients.
  3. Remove the chicken from the marinade and dredge in the Breading, ensuring it's fully coated. Press the breading on to adhere well.
  4. Heat about 1 inch of peanut oil in a deep fryer or large pot to 375°F (190°C).
  5. Fry the chicken for 3-4 minutes, or until golden brown and cooked through. Monitor the oil temperature to maintain consistency.
  6. While the chicken is frying, prepare the Chipotle Aioli by combining all Aioli ingredients in a small bowl and whisking until smooth. Adjust seasoning to taste.
  7. Drain the fried chicken on paper towels and serve immediately with the Chipotle Aioli for dipping.
