Instructions
  1. In a large bowl, gently combine all Steak ingredients (do not overmix). Form into four patties.
  2. Heat a cast iron skillet over medium-high heat.
  3. Cook patties for 4-5 minutes per side, or until browned and cooked to desired doneness.
  4. Remove patties from skillet and set aside.
  5. In the same skillet, melt all Gravy Butter over medium heat.
  6. Add all Gravy Mixed wild mushrooms and cook until softened and browned, about 8-10 minutes.
  7. Sprinkle all Gravy All-purpose flour over the mushrooms and cook for 1 minute, stirring constantly.
  8. Deglaze the pan with all Gravy Dry sherry, scraping up any browned bits from the bottom.
  9. Gradually whisk in all Gravy Beef stock until smooth.
  10. Stir in all Gravy Worcestershire sauce, all Gravy Black pepper, and all Gravy Fresh thyme leaves.
  11. Bring to a simmer and cook until thickened, about 7-10 minutes.
  12. Remove from heat and stir in all Gravy Truffle oil.
  13. Return the patties to the skillet and cover with the gravy. Simmer for another 2-3 minutes to heat through.
  14. Serve immediately, garnished with extra thyme leaves if desired.
