Instructions
In a bowl, combine all Marinade ingredients. Add steak and marinate for at least 4 hours, or up to 24 hours.
Remove steak from marinade and pat dry. Chop steak into bite-sized pieces.
In a large cast-iron skillet, melt 4 tbsp Clarified Butter over medium-high heat. Add chopped steak and cook until browned, about 7-9 minutes.
Add diced Yellow Onion, Green Bell Pepper, and Red Bell Pepper to the skillet with the steak. Cook until vegetables are tender-crisp, about 7 minutes.
To make the Gravy, melt 4 tbsp Clarified Butter in a separate saucepan over medium heat. Whisk in Flour and cook for 3-4 minutes to create a dark roux.
Deglaze the pan with Red Wine, scraping up any browned bits. Gradually whisk in Beef Stock until smooth. Bring to a simmer, then stir in Worcestershire Sauce, Tomato Paste, Smoked Paprika, Cayenne Pepper, and Black Pepper. Reduce heat to low and simmer for 30 minutes, stirring occasionally, to allow flavors to meld.
Pour Gravy over the steak and vegetables in the skillet. Stir to combine and heat through. Serve immediately.
