Instructions
  1. Brine the ribs: Combine Brine ingredients in a large container. Submerge ribs in brine and refrigerate for 8-12 hours.
  2. Remove ribs from brine and pat dry. Season with Ribs ingredients.
  3. Prepare smoker to 225°F (107°C) using hickory wood chips.
  4. Smoke ribs for 3-4 hours, maintaining consistent temperature.
  5. While ribs are smoking, prepare the Sauce by combining all Sauce ingredients in a saucepan. Bring to a simmer over medium heat and cook for 10 minutes, stirring occasionally, until slightly thickened.
  6. Increase smoker temperature to 275°F (135°C).
  7. Brush ribs generously with Sauce. Continue smoking for another 30-45 minutes, brushing with Sauce every 10-15 minutes, until sauce is caramelized and ribs are tender.
  8. Let rest for 15 minutes before serving.
