Instructions
Brine the ribs: Combine Brine ingredients in a large container. Submerge ribs in brine and refrigerate for 8-12 hours.
Remove ribs from brine and pat dry. Season with Ribs ingredients.
Prepare smoker to 225°F (107°C) using hickory wood chips.
Smoke ribs for 3-4 hours, maintaining consistent temperature.
While ribs are smoking, prepare the Sauce by combining all Sauce ingredients in a saucepan. Bring to a simmer over medium heat and cook for 10 minutes, stirring occasionally, until slightly thickened.
Increase smoker temperature to 275°F (135°C).
Brush ribs generously with Sauce. Continue smoking for another 30-45 minutes, brushing with Sauce every 10-15 minutes, until sauce is caramelized and ribs are tender.
