2 large Yellow onion-very thinly sliced
2 tbsp Beef broth
1 tbsp Butter
1 tsp Sea salt

A premium take on the classic sliders, utilizing dry-aged beef, homemade steam-grilled onions, and artisanal buns.
Instructions
  1. Steam-Grill the Onions: Melt Butter in a large skillet over medium heat. Add the thinly sliced Yellow onion and cook for 15-20 minutes, stirring occasionally, until softened. Add Beef broth, cover, and steam for another 10-15 minutes until very tender and translucent.
  2. In a large bowl, gently combine the Dry-aged ground beef, Sea salt, White pepper, and Smoked paprika. Do not overmix.
  3. Divide the beef mixture into 12 equal portions and form into very thin patties, slightly larger than the slider buns.
  4. Heat a large griddle or cast iron skillet over medium-high heat.
  5. Cook the patties for 1-2 minutes per side, or until browned and cooked through. The thin patties cook quickly.
  6. During the last minute of cooking, place a slice of Sharp cheddar cheese on each patty to melt.
  7. Place each patty on a Potato roll, top with steamed-grilled onions and a Bread and butter pickle chip, and serve immediately.
