Instructions
  1. Preheat oven to 400°F (200°C). Toss Roasted Corn with olive oil, salt, and pepper. Roast for 15-20 minutes, or until slightly charred.
  2. In a saucepan, melt Butter over medium heat. Whisk in Flour and cook for 1-2 minutes to create a roux.
  3. Gradually whisk in Heavy Cream until smooth. Bring to a simmer, stirring constantly. Cook for 5 minutes, or until thickened.
  4. Remove from heat and stir in Nutmeg, Cayenne Pepper, Salt, and Pepper.
  5. In a large bowl, combine the roasted corn and the sauce. Stir in 3/4 cup of Gruyère Cheese, Chives, and Parsley.
  6. Pour the mixture into a greased 8x8 inch baking dish.
  7. Sprinkle the remaining Gruyère Cheese over the top.
  8. Bake for 25-30 minutes, or until golden brown and bubbly. Let cool slightly before serving.
