Instructions
First, prepare the Chipotle Aioli: In a small bowl, combine all Chipotle Aioli ingredients and whisk until smooth. Set aside.
In a medium bowl, combine all Fritter Batter ingredients and mix until just combined. Do not overmix.
Heat Avocado oil in a large skillet over medium-high heat.
Drop spoonfuls of batter into the hot oil, flattening slightly with the back of a spoon.
Cook for 3-4 minutes per side, or until golden brown and cooked through.
Remove fritters from skillet and place on a paper towel-lined plate to drain excess oil.
Serve immediately with Chipotle Aioli.
