Corn Fritters
These fritters feature fresh sweet corn and a blend of herbs for a more complex flavor. A touch of cheese adds richness.

Corn-fresh kernels cut from 2 ears
1/2 cup
Flour-all purpose
1/4 cup
Milk

Egg
1 tbsp
Chopped chives

These fritters feature fresh sweet corn and a blend of herbs for a more complex flavor. A touch of cheese adds richness.
Instructions
- In a medium bowl, combine all Fritter Batter ingredients and mix until just combined. Do not overmix.
- Heat Olive oil in a large skillet over medium heat.
- Drop spoonfuls of batter into the hot oil, flattening slightly with the back of a spoon.
- Cook for 2-3 minutes per side, or until golden brown and cooked through.
- Remove fritters from skillet and place on a paper towel-lined plate to drain excess oil.
- Serve immediately.
