Instructions
Cook Cavatappi Pasta according to package directions. Drain and set aside.
Prepare Cheese Sauce: In a saucepan, melt Butter over medium heat. Whisk in Flour and cook for 1 minute. Gradually whisk in Heavy Cream until smooth. Bring to a simmer, stirring constantly. Reduce heat and stir in Fontina Cheese, Parmigiano-Reggiano, Nutmeg, and White Pepper until cheese is melted and sauce is smooth.
In a large bowl, combine cooked Pasta and Cheese Sauce. Let cool slightly.
Prepare Cottage Cheese Mixture: In a separate bowl, combine Cottage Cheese, Prosciutto, and Egg Yolk. Mix well.
Gently fold Cottage Cheese Mixture into the pasta and cheese mixture.
Shape the mixture into 1-inch bites.
Coat each bite in Japanese Panko Bread Crumbs.
Bake at 375°F (190°C) for 20-25 minutes, or until golden brown and heated through.
Prepare Truffle Aioli: In a small bowl, whisk together Mayonnaise, Truffle Oil, Garlic, and Lemon Juice. Serve mac bites with Truffle Aioli.
