Instructions
  1. Cook Macaroni according to package directions. Drain and set aside.
  2. Prepare Cheese Sauce: In a saucepan, melt Butter over medium heat. Whisk in Flour and cook for 1 minute. Gradually whisk in Milk until smooth. Bring to a simmer, stirring constantly. Reduce heat and stir in Cheddar Cheese, Gruyere Cheese, Dijon Mustard, Salt, and Pepper until cheese is melted and sauce is smooth.
  3. In a large bowl, combine cooked Macaroni and Cheese Sauce. Let cool slightly.
  4. Prepare Cottage Cheese Mixture: In a separate bowl, combine Cottage Cheese, Parmesan Cheese, Egg, Chives, and Parsley. Mix well.
  5. Gently fold Cottage Cheese Mixture into the macaroni and cheese mixture.
  6. Shape the mixture into 1-inch bites.
  7. Combine Panko Bread Crumbs and Melted Butter in a shallow dish.
  8. Coat each bite in the Panko mixture.
  9. Bake at 375°F (190°C) for 18-22 minutes, or until golden brown and heated through.
