Cousin Clara's Scalloped Oyster Casserole

A refined version of the classic casserole, featuring a touch of sherry and panko breadcrumbs for a more complex flavor and texture.
Instructions
- Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- Prepare the Sauce: In a large saucepan, melt Butter over medium heat. Sauté Chopped shallots until softened, about 3 minutes.
- Whisk in All-purpose flour and cook for 1-2 minutes, creating a roux.
- Gradually whisk in Milk and Dry sherry, stirring constantly to prevent lumps. Bring to a simmer, and cook until thickened, about 5-7 minutes.
- Stir in Salt, White pepper, and Lemon juice. Remove from heat.
- Layer half of the Oysters in the prepared baking dish. Pour half of the Sauce over the oysters.
- Repeat layers with remaining Oysters and Sauce.
- Combine Panko breadcrumbs, Grated Parmesan cheese, and Melted butter in a small bowl. Sprinkle evenly over the casserole.
- Bake for 35-40 minutes, or until bubbly and golden brown.
