Instructions
  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. Prepare the Streusel Topping: In a small bowl, combine all Streusel Topping ingredients. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Refrigerate until ready to use.
  3. In a large bowl, whisk together all Dry Ingredients.
  4. In a separate bowl, combine all Wet Ingredients. Mix well.
  5. Pour the Wet Ingredients into the Dry Ingredients and stir until just combined. Do not overmix.
  6. Gently fold in the chopped Pecans.
  7. Pour batter into the prepared loaf pan and sprinkle evenly with the Streusel Topping.
  8. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean. If the topping begins to brown too quickly, tent with foil.
  9. Let cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
