Cowboy Bake
A hearty and comforting casserole with ground beef, beans, corn, and a cheesy cornbread topping.

A hearty and comforting casserole with ground beef, beans, corn, and a cheesy cornbread topping.
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, brown ground beef over medium-high heat. Drain any excess grease.
- Add onion and garlic to the skillet and cook until softened, about 5 minutes.
- Stir in kidney beans, corn, diced tomatoes, taco seasoning, chili powder, salt, and pepper. Bring to a simmer and cook for 5 minutes.
- Pour the beef mixture into a 9x13 inch baking dish.
- Prepare the cornbread topping according to package directions, using milk and egg.
- Stir in cheddar cheese into the cornbread batter.
- Spread the cornbread batter evenly over the beef mixture.
- Bake for 20-25 minutes, or until the cornbread is golden brown and cooked through. Let cool slightly before serving.
