A richer cowboy bake with a blend of ground beef and chorizo, fire-roasted tomatoes, poblano peppers, and a honey-sweetened cornbread topping.
Instructions
  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, brown ground beef and chorizo over medium-high heat. Drain any excess grease.
  3. Add onion and poblano pepper to the skillet and cook until softened, about 5 minutes.
  4. Stir in garlic, black beans, corn, fire-roasted diced tomatoes, chili powder, smoked paprika, cumin, salt, and pepper. Bring to a simmer and cook for 5 minutes.
  5. Pour the beef mixture into a 9x13 inch baking dish.
  6. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together buttermilk, honey, vegetable oil, and egg.
  7. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  8. Stir in Monterey Jack cheese into the cornbread batter.
  9. Spread the cornbread batter evenly over the beef mixture.
  10. Bake for 25-30 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean. Let cool slightly before serving.
