4 large Russet potatoes
2 tbsp Olive oil
1 tsp Salt
1/2 tsp Black pepper
1 tsp Smoked Paprika

Baked potatoes loaded with homemade chili, pepper jack cheese, and chipotle crema.
Instructions
  1. Preheat oven to 400°F (200°C).
  2. Scrub Potatoes and pat dry. Pierce each potato several times with a fork.
  3. Rub Potatoes with Olive oil, Salt, Black pepper, and Smoked Paprika.
  4. Bake for 45-60 minutes, or until Potatoes are easily pierced with a fork.
  5. While the potatoes bake, prepare the Chili. Brown Ground beef in a large pot over medium-high heat. Drain off any excess fat.
  6. Add Onion and Garlic to the pot and cook until softened, about 5 minutes.
  7. Stir in Diced tomatoes, Kidney beans, Chili powder, Cumin, Oregano, Salt, and Black pepper. Bring to a simmer and cook for 15 minutes, stirring occasionally.
  8. To make the Chipotle Crema, combine all Chipotle Crema ingredients in a small bowl and stir until smooth.
  9. Once the Potatoes are cooked, slice each potato lengthwise.
  10. Spoon Chili over each potato.
  11. Top with Shredded pepper jack cheese, Chipotle Crema, and Chopped cilantro.
  12. Serve immediately.
