Instructions
  1. Season Chicken with salt and pepper.
  2. In a large pot or Dutch oven, brown the Chicken over medium-high heat. Remove Chicken and set aside.
  3. Melt Butter in the same pot. Add Onion, Carrots, and Celery and cook until softened, about 5-7 minutes.
  4. Stir in flour and cook for 1 minute.
  5. Gradually whisk in Chicken broth until smooth. Bring to a simmer.
  6. Return Chicken to the pot. Reduce heat and simmer for 20-25 minutes, or until Chicken is cooked through.
  7. While Chicken simmers, prepare the Dumplings: In a bowl, whisk together flour, baking powder, and salt.
  8. Add Milk and melted butter to the dry ingredients and stir until just combined. Do not overmix.
  9. Drop spoonfuls of Dumpling batter into the simmering broth. Cover and cook for 15-20 minutes, or until Dumplings are cooked through and fluffy.
  10. Serve hot.
