Instructions
In a bowl, combine all Chicken ingredients and marinate for at least 1 hour, or preferably overnight.
Heat a grill or grill pan to medium-high heat.
Grill the chicken for 6-8 minutes per side, or until cooked through (internal temperature reaches 165°F / 74°C). Let rest for 10 minutes, then slice or cube.
To make the Vinaigrette, combine all Vinaigrette ingredients in a blender and blend until smooth. Strain through a fine-mesh sieve to remove seeds.
In a large bowl, combine Baby spinach and arugula blend, goat cheese, and blackberries.
Add the grilled chicken and toasted slivered almonds to the salad.
Drizzle the Vinaigrette over the salad and toss gently to combine. Serve immediately.
