Instructions
  1. Cook Pasta according to package directions. Drain and set aside.
  2. In a large saucepan, melt Butter over medium heat.
  3. Whisk in Flour and cook for 1-2 minutes, creating a roux.
  4. Gradually whisk in Milk and Heavy Cream until smooth. Bring to a simmer, stirring constantly.
  5. Reduce heat to low and simmer for 5-7 minutes, or until sauce has thickened.
  6. Remove from heat and stir in Salt, Pepper, and Nutmeg.
  7. Add Cheddar Cheese and Gruyere Cheese and stir until melted and smooth.
  8. Add cooked Pasta to the Cheese Sauce and stir to combine.
  9. Serve immediately.
