Prepare the Chicken: Brine Chicken in Buttermilk, Apple Cider Vinegar, Smoked Paprika, Salt, and Pepper for at least 4 hours, or overnight. Dredge in Stone-Ground Cornmeal. Fry in Duck Fat at 350°F (175°C) for 15-20 minutes, or until cooked through.
Prepare the Hashbrowns: Heat Duck Fat in a skillet. Add shredded Potatoes, Rosemary, and Salt. Cook until golden brown and crispy, about 10-15 minutes.
Prepare the Biscuits: Combine Flour, Baking Powder, Baking Soda, and Salt. Cut in Cold Butter. Add Buttermilk and mix until just combined. Gently pat dough to 1 inch thickness and cut biscuits. Bake at 425°F (220°C) for 12-15 minutes.
