Rinse the Beans thoroughly and soak overnight in cold water.
Drain and rinse the soaked Beans.
Place the Beans in a large, heavy-bottomed pot and cover with the filtered water. Bring to a boil, then reduce heat to low, cover, and simmer for 3-4 hours, or until very tender. Add more water if needed to keep the beans covered.
While the beans are simmering, prepare the Mirepoix. Heat the olive oil in a large skillet over medium heat.
Add the diced onion, carrot, and celery to the skillet and cook until softened and lightly caramelized, about 15-20 minutes, stirring occasionally.
Add the diced bacon to the Mirepoix and cook until crispy.
Add the smoked paprika, salt, pepper, and cumin to the skillet and stir to combine.
Stir in the maple syrup.
Pour the Flavoring mixture into the pot with the cooked Beans. Stir well.
Continue to simmer for another 30 minutes to allow the flavors to meld.
Serve hot.
