3/4 cup All-Purpose Flour
1/4 cup Granulated Sugar
1 tbsp Baking Powder

Instructions
  1. Preheat oven to 400°F (200°C). Grease a 8x8 inch baking pan.
  2. Cook Bacon in a skillet over medium heat until crispy. Remove bacon and set aside to drain on paper towels. Reserve 1/4 cup of bacon fat.
  3. Crumble the cooked Bacon.
  4. In a large bowl, combine all Dry Ingredients.
  5. In a separate bowl, whisk together Cultured Buttermilk, reserved Bacon Fat, and Egg.
  6. Add Wet Ingredients to Dry Ingredients and stir until just combined. Do not overmix.
  7. Stir in the crumbled Bacon, minced Jalapeño, and Cheddar Cheese.
  8. Pour batter into the prepared baking pan.
  9. Bake for 22-27 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown and crackly.
  10. Let cool slightly before serving.
