Bloom Saffron threads in 2 tablespoons of warm chicken stock.
Season Chicken with sea salt and white pepper.
In a large, heavy-bottomed pot, melt Butter over medium heat. Sear Chicken until golden brown on both sides. Remove from pot and set aside.
Add Shallot and Mushrooms to the pot and sauté until softened.
Add Arborio rice and toast for 2-3 minutes, stirring constantly.
Deglaze the pot with Sherry, scraping up any browned bits.
Begin adding warm Chicken stock, 1/2 cup at a time, stirring constantly until each addition is absorbed before adding the next. After 2 cups of stock, add the saffron-infused stock.
Continue adding stock until rice is creamy and al dente, about 20-25 minutes.
Stir in Heavy cream and Parmesan cheese. Return Chicken to the pot and heat through.
Garnish with Fresh chives and serve immediately.
