Instructions
  1. Preheat oven to 375°F (190°C).
  2. Rub Chicken with Olive Oil, Lemon Zest, Sea Salt, and Black Pepper. Roast for 25-30 minutes, or until cooked through. Let cool and shred.
  3. Prepare Pesto: Combine Basil, Pine Nuts, Garlic, Parmigiano-Reggiano, Olive Oil, and Lemon Juice in a food processor. Pulse until smooth. Season with salt and pepper.
  4. Cook Pasta according to package directions. Drain and set aside.
  5. In a saucepan, heat Heavy Cream and Sherry. Simmer for 5 minutes to reduce slightly.
  6. Combine cooked Pasta, shredded Chicken, and Pesto in a large bowl. Add the Cream Sauce and mix well.
  7. Pour the pasta mixture into a greased 9x13 inch baking dish.
  8. Sprinkle Fontina, Gruyere, and Parmigiano-Reggiano Cheese over the top.
  9. Bake for 20-25 minutes, or until bubbly and golden brown.
