Instructions
  1. In a bowl, combine all Marinade ingredients and marinate the Catfish fillets for at least 30 minutes, or up to 2 hours.
  2. In a separate bowl, combine all Coating ingredients.
  3. Dredge each marinated Catfish fillet in the Coating mixture, ensuring it's fully coated.
  4. Heat Peanut oil in a large, heavy-bottomed skillet over medium-high heat.
  5. Carefully place the coated Catfish fillets into the hot oil, ensuring not to overcrowd the skillet.
  6. Fry for 4-5 minutes per side, or until golden brown and cooked through.
  7. Remove the fried Catfish and place on a wire rack to drain excess oil.
  8. Serve immediately.
