Instructions
  1. In a bowl, combine all Chicken ingredients (flour, garlic powder, Italian seasoning, smoked paprika, salt, pepper).
  2. In a separate bowl, beat the eggs.
  3. In another bowl, combine Panko bread crumbs and Parmesan cheese.
  4. Dip each chicken piece in the flour mixture, then the beaten eggs, and finally the Panko mixture, ensuring it's fully coated.
  5. Heat vegetable oil in a large skillet over medium-high heat.
  6. Fry the chicken pieces in batches for 3-4 minutes per side, or until golden brown and cooked through.
  7. Remove chicken and place on a paper towel-lined plate to drain excess oil.
  8. For the Sauce, heat olive oil in a saucepan over medium heat. Add garlic and cook until fragrant (about 30 seconds).
  9. Add crushed tomatoes, oregano, red pepper flakes, sugar, salt, and pepper. Bring to a simmer and cook for 15-20 minutes, stirring occasionally.
  10. Place fried chicken in a baking dish. Top with Sauce, Mozzarella cheese, and Parmesan cheese.
  11. Bake at 350°F (175°C) for 10-15 minutes, or until cheese is melted and bubbly.
