Instructions
- In a bowl, combine all Chicken ingredients (flour, garlic powder, Italian seasoning, smoked paprika, salt, pepper).
- In a separate bowl, beat the eggs.
- In another bowl, combine Panko bread crumbs and Parmesan cheese.
- Dip each chicken piece in the flour mixture, then the beaten eggs, and finally the Panko mixture, ensuring it's fully coated.
- Heat vegetable oil in a large skillet over medium-high heat.
- Fry the chicken pieces in batches for 3-4 minutes per side, or until golden brown and cooked through.
- Remove chicken and place on a paper towel-lined plate to drain excess oil.
- For the Sauce, heat olive oil in a saucepan over medium heat. Add garlic and cook until fragrant (about 30 seconds).
- Add crushed tomatoes, oregano, red pepper flakes, sugar, salt, and pepper. Bring to a simmer and cook for 15-20 minutes, stirring occasionally.
- Place fried chicken in a baking dish. Top with Sauce, Mozzarella cheese, and Parmesan cheese.
- Bake at 350°F (175°C) for 10-15 minutes, or until cheese is melted and bubbly.
