Instructions
- Prepare the Queso: In a medium saucepan, combine all Queso ingredients. Heat over medium-low heat, stirring constantly until melted and smooth. Set aside.
- Form the Burger Patties: Gently divide the Ground Beef into 4 equal portions. Do not overwork the meat. Form each portion into a loose ball.
- Smash the Burgers: Heat a large cast iron skillet or griddle over medium-high heat. Place the beef balls onto the hot surface. Immediately smash each ball flat with a sturdy spatula, creating a thin patty about 1/4 inch thick.
- Cook the Burgers: Cook for 2-3 minutes per side, until browned and crispy. During the last minute of cooking, top each patty with a slice of American Cheese.
- Assemble the Burgers: Spread melted Butter on the cut sides of the Hamburger Buns. Place the cheeseburger patties onto the bottom buns. Top each patty with a generous spoonful of Queso and a sprinkle of Pickles. Cover with the top buns and serve immediately.
