Prepare the Chipotle Aioli: In a small bowl, combine all Chipotle Aioli ingredients. Stir well and set aside.
Prepare the Queso: In a medium saucepan, combine all Queso ingredients. Heat over medium-low heat, stirring constantly until melted and smooth. Set aside.
Form the Burger Patties: Gently divide the Wagyu Ground Beef into 4 equal portions. Do not overwork the meat. Form each portion into a loose ball.
Smash the Burgers: Heat a large cast iron skillet or griddle over high heat. Place the beef balls onto the hot surface. Immediately smash each ball flat with a sturdy spatula, creating a thin patty about 1/4 inch thick.
Cook the Burgers: Cook for 1.5-2 minutes per side, until browned and crispy. The Wagyu beef cooks quickly.
Assemble the Burgers: Spread Compound Butter on the cut sides of the Potato Rolls. Place the burger patties onto the bottom buns. Spread a generous amount of Chipotle Aioli on the top buns. Top each patty with a generous spoonful of Queso and a sprinkle of Pickled Red Onions. Cover with the top buns and serve immediately.
