Instructions
  1. Preheat oven to 400°F (200°C).
  2. Prepare the Tortilla Coating by combining all ingredients in a shallow dish.
  3. In a separate shallow dish, whisk together the Binding ingredients.
  4. Prepare the Chipotle Mayo by combining all ingredients in a small bowl. Set aside.
  5. Dip each chicken breast into the Binding mixture, then dredge in the Tortilla Coating, pressing to adhere.
  6. Heat Oil in a large oven-safe skillet over medium-high heat.
  7. Sear chicken breasts for 2-3 minutes per side, until golden brown.
  8. Transfer skillet to the preheated oven and bake for 20-25 minutes, or until chicken is cooked through (internal temperature reaches 165°F/74°C).
  9. Let rest for 5 minutes before serving with Chipotle Mayo.
