Prepare the Wasabi Aioli: In a small bowl, whisk together the Japanese Mayonnaise, Wasabi Paste, and Lemon Juice. Adjust wasabi to taste. Refrigerate until serving.
Peel, pit, and carefully scoop out the Avocado flesh. Using a melon baller or small spoon, form the Avocado into small, uniform spheres.
Prepare the Breading: In a bowl, combine the Black Sesame Seeds, Yuzu Kosho, and Potato Starch. In a separate bowl, whisk together the Egg Yolks and Ice Water.
Dip each Avocado sphere into the Egg Yolk mixture, then dredge thoroughly in the Black Sesame Seed mixture, ensuring a complete coating.
Heat the Peanut Oil in a deep fryer or large pot to 375°F (190°C).
Carefully add the breaded Avocado spheres to the hot oil in small batches, ensuring not to overcrowd the pot.
Fry for 1-2 minutes, or until golden brown and crispy.
Remove the fried Avocado balls with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
