Prepare the Mango Salsa: In a medium bowl, combine all Mango Salsa ingredients and mix gently. Set aside to allow flavors to meld.
Peel, pit, and cut the Avocados into 1-inch chunks.
Prepare the Breading Station: In three separate shallow dishes, place the Flour, beaten Eggs, and Panko Bread Crumbs mixed with Parmesan Cheese, Smoked Paprika, Garlic Powder, Cayenne Pepper, Salt, and Black Pepper.
Dredge each Avocado chunk in the Flour, then dip in the Egg, and finally coat thoroughly with the Panko mixture.
Heat the Canola Oil in a deep fryer or large pot to 350°F (175°C).
Carefully add the breaded Avocado chunks to the hot oil in batches, ensuring not to overcrowd the pot.
Fry for 2-3 minutes, or until golden brown and crispy.
Remove the fried Avocado balls with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
