Instructions
  1. Cook Cavatappi Pasta according to package directions. Drain and set aside.
  2. Prepare Mac and Cheese: In a saucepan, melt Butter over medium heat. Whisk in Flour and cook for 1 minute. Gradually whisk in Milk until smooth. Bring to a simmer, stirring constantly. Reduce heat and stir in Cheddar Cheese, Gruyere Cheese, Parmesan Cheese, Truffle Oil, Salt, and White Pepper until cheese is melted and sauce is smooth.
  3. Add cooked Pasta to the cheese sauce and stir to combine. Set aside.
  4. Cook Bacon until crispy. Drain on paper towels.
  5. Prepare Black Garlic Aioli: In a small bowl, combine Mayonnaise, Black Garlic, and Lemon Juice. Stir well.
  6. Prepare Battering: In a bowl, whisk together Rice Flour, Baking Powder, and Smoked Paprika. In a separate bowl, whisk together Sparkling Water and Egg Yolk. Add wet ingredients to dry ingredients and whisk until just combined.
  7. Assemble Sandwiches: Spread Mac and Cheese on two slices of Bread. Top with Bacon. Cover with remaining Bread slices.
  8. Dip each sandwich in the Battering, ensuring it is fully coated.
  9. Heat Grapeseed Oil in a deep fryer or large pot to 350°F (175°C).
  10. Carefully lower battered sandwiches into the hot oil and fry for 2-3 minutes per side, or until golden brown and crispy.
