Instructions
  1. Cook Macaroni according to package directions. Drain and set aside.
  2. Prepare Mac and Cheese: In a saucepan, melt Butter over medium heat. Whisk in Flour and cook for 1 minute. Gradually whisk in Milk until smooth. Bring to a simmer, stirring constantly. Reduce heat and stir in Cheddar Cheese, Gruyere Cheese, Salt, Pepper, and Nutmeg until cheese is melted and sauce is smooth.
  3. Add cooked Macaroni to the cheese sauce and stir to combine. Set aside.
  4. Cook Bacon until crispy. Drain on paper towels.
  5. Prepare Spicy Aioli: In a small bowl, combine Mayonnaise, Sriracha, and Lemon Juice. Stir well.
  6. Prepare Battering: In a bowl, whisk together Flour, Baking Powder, and Cayenne Pepper. In a separate bowl, whisk together Club Soda and Egg. Add wet ingredients to dry ingredients and whisk until just combined.
  7. Assemble Sandwiches: Spread Mac and Cheese on two slices of Bread. Top with Bacon. Cover with remaining Bread slices.
  8. Dip each sandwich in the Battering, ensuring it is fully coated.
