Dill Pickle French Fry Casserole

A sophisticated take on the classic, featuring duck fat fries, a creamy béchamel sauce infused with fresh dill, and artisanal pickles.
Instructions
- Preheat oven to 400°F (200°C).
- Prepare French Fries: Toss potato fries with Duck Fat and bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- To make the Sauce: In a saucepan, melt Butter over medium heat. Whisk in Flour and cook for 1 minute.
- Gradually whisk in Milk until smooth. Bring to a simmer, stirring constantly, until thickened.
- Remove from heat and stir in Dill Pickle Brine, Fresh Dill, Nutmeg, and White Pepper.
- Spread cooked French Fries in a 9x13 inch baking dish.
- Pour Sauce over the French Fries, ensuring they are evenly coated.
- Sprinkle sliced Cornichons over the sauce.
- Top with Gruyère Cheese and Parmesan Cheese.
- Bake for 15-20 minutes, or until bubbly and cheese is melted and golden brown.
- Let cool slightly before serving.
