Instructions
  1. In the bowl of a stand mixer, combine Warm Whole Milk, Instant Yeast, Granulated Sugar, Vanilla Extract, and Salt. Let stand for 5 minutes.
  2. Add Egg Yolks and mix until combined. With the mixer running on low, gradually add Bread Flour, 1/2 cup at a time.
  3. Once the dough starts to come together, add the cold, cubed Unsalted Butter, a few pieces at a time, allowing each addition to incorporate before adding more. Continue kneading for 8-10 minutes until the dough is smooth and elastic.
  4. Form the dough into a ball, place in a lightly greased bowl, turning to coat. Cover and refrigerate for at least 4 hours, or preferably overnight.
  5. Gently punch down the dough and divide into 12 equal pieces. Shape each piece into a round roll.
  6. Place rolls in a greased 9x13 inch baking dish. Cover and let rise in a warm place for 60-90 minutes, or until puffy.
  7. Preheat oven to 350°F (175°C).
  8. In a small bowl, combine softened Unsalted Butter and Flaky Sea Salt. Mix well.
  9. Dot the tops of the rolls with the Sea Salt Butter.
  10. Bake for 20-25 minutes, or until golden brown.
