Instructions
  1. Preheat oven to 500°F (260°C) with a pizza stone inside.
  2. Prepare the Onion Jam: Heat Olive Oil in a large skillet over medium-low heat. Add Yellow Onions and cook slowly, stirring occasionally, for 45-60 minutes, until deeply caramelized. Add Balsamic Vinegar, Brown Sugar, and Thyme. Cook for another 5-10 minutes, until jammy. Set aside.
  3. Prepare the Cheese Sauce: In a saucepan, melt Butter over medium heat. Whisk in Flour and cook for 1 minute. Gradually whisk in Milk until smooth. Bring to a simmer, stirring constantly. Reduce heat and stir in Aged Cheddar Cheese, Gruyere Cheese, Garlic Powder, and White Pepper until cheese is melted and sauce is smooth.
  4. Prepare the Steak Filling: Heat Olive Oil in a large skillet over medium-high heat. Add sliced Ribeye Steak and cook until browned, about 3-5 minutes. Deglaze the pan with Dry Sherry and stir in Smoked Paprika.
  5. Stretch or roll out Neapolitan Pizza Dough to desired thickness and place on a lightly floured pizza peel.
  6. Spread Cheese Sauce evenly over the pizza dough.
  7. Top with Steak Filling, Onion Jam, and Provolone Cheese.
  8. Carefully slide pizza onto the preheated pizza stone. Bake for 8-10 minutes, or until crust is golden brown and cheese is melted and bubbly.
  9. Garnish with Fresh Parsley before serving.
