Instructions
  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine the Shredded Chicken, Black Beans, Corn, and 1 cup of shredded Cheddar Cheese.
  3. In a separate bowl, combine the Red Enchilada Sauce and Water. Stir to combine.
  4. Spread a thin layer of the Sauce mixture on the bottom of a 9x13 inch baking dish.
  5. Arrange half of the tortilla wedges over the sauce.
  6. Top with half of the Chicken Filling.
  7. Pour half of the remaining Sauce mixture over the filling.
  8. Repeat layers with remaining tortillas, filling, and sauce.
  9. Sprinkle the remaining Shredded Cheddar Cheese over the top.
  10. Bake for 25-30 minutes, or until heated through and cheese is melted and bubbly.
  11. Let stand for 5 minutes before serving.
