Instructions
  1. Prepare the Fries: Soak the cut potatoes in cold water for at least 1 hour, changing the water halfway through, to remove excess starch. Drain and pat completely dry.
  2. Make the Cajun Seasoning: In a small bowl, combine all Cajun Seasoning ingredients and mix well.
  3. Fry the Fries (First Fry): Heat the Duck Fat in a large, heavy-bottomed pot or deep fryer to 300°F (150°C). Fry the potatoes in batches for about 8-10 minutes, until softened but not browned. Remove and drain on a wire rack.
  4. Cool and Rest: Allow the fries to cool completely for at least 30 minutes.
  5. Fry the Fries (Second Fry): Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for 3-4 minutes, until golden brown and crispy.
  6. Season the Fries: Immediately after removing from the oil, place the fries in a large bowl and sprinkle generously with the Cajun Seasoning. Toss to coat evenly.
  7. Garnish and Serve: Sprinkle with fresh Parsley and serve immediately.
