Instructions
  1. Prepare the Fries: Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. Drain and pat completely dry.
  2. Make the Cajun Seasoning: In a small bowl, combine all Cajun Seasoning ingredients and mix well.
  3. Fry the Fries (First Fry): Heat the Peanut Oil and Vegetable Oil in a large, heavy-bottomed pot or deep fryer to 325°F (160°C). Fry the potatoes in batches for about 5-7 minutes, until slightly softened but not browned. Remove and drain on paper towels.
  4. Fry the Fries (Second Fry): Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for 2-3 minutes, until golden brown and crispy.
  5. Season the Fries: Immediately after removing from the oil, place the fries in a large bowl and sprinkle generously with the Cajun Seasoning. Toss to coat evenly.
  6. Serve immediately.
