Instructions
  1. Prepare the Duck Fat Fries: Soak the fries in cold water for 30 minutes. Drain and pat dry.
  2. Heat the Duck Fat in a deep fryer or large pot to 325°F (160°C).
  3. Fry the fries in batches for 8-10 minutes, or until golden brown and crispy. Remove and drain on paper towels. Immediately toss with Homemade Cajun Seasoning.
  4. Prepare the Cajun Remoulade: In a small bowl, combine all Cajun Remoulade ingredients. Mix well and refrigerate for at least 30 minutes to allow flavors to meld.
  5. Grill or pan-sear the Artisanal Hot Dogs until heated through and slightly charred.
  6. Place each Hot Dog in a Pretzel bun. Top with a generous portion of Duck Fat Fries and drizzle with Cajun Remoulade.
