  1. Preheat oven to 350°F (175°C).
  2. In a large oven-safe skillet, cook Chorizo over medium heat, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Add Vegetables to the skillet with the Chorizo and cook until softened, about 5-7 minutes.
  4. In a separate bowl, whisk together Eggs, Milk, Salt, and Pepper.
  5. Pour the egg mixture over the Chorizo and Vegetables in the skillet. Cook for a few minutes, stirring occasionally, until the eggs begin to set.
  6. While the eggs are cooking, prepare the Queso Sauce. In a saucepan, combine all Queso Sauce ingredients. Cook over medium heat, stirring constantly, until the cheese is melted and the sauce is smooth.
  7. Pour the Queso Sauce over the egg mixture in the skillet. Stir gently to combine.
  8. Bake in the preheated oven for 15-20 minutes, or until the queso is bubbly and golden brown.
  9. Garnish with Chopped Cilantro and a dollop of Sour Cream before serving.
