Instructions
  1. Prepare the Chorizo: In a bowl, combine Pork Shoulder with Ancho Chili Powder, Smoked Paprika, Cumin, Oregano, Cloves, and Apple Cider Vinegar. Marinate for at least 30 minutes. Heat Olive Oil in a skillet and cook the marinated pork until browned and cooked through. Set aside.
  2. Preheat oven to 350°F (175°C).
  3. In a large oven-safe skillet, cook the House-Made Chorizo over medium heat, breaking it up with a spoon. Drain off any excess grease.
  4. Add Vegetables to the skillet with the Chorizo and cook until softened, about 5-7 minutes.
  5. In a separate bowl, whisk together Eggs, Heavy Cream, Salt, and Pepper.
  6. Pour the egg mixture over the Chorizo and Vegetables in the skillet. Cook for a few minutes, stirring occasionally, until the eggs begin to set.
  7. While the eggs are cooking, prepare the Queso Sauce. In a saucepan, combine all Queso Sauce ingredients. Cook over medium heat, stirring constantly, until the cheese is melted and the sauce is smooth.
  8. Pour the Queso Sauce over the egg mixture in the skillet. Stir gently to combine.
  9. Bake in the preheated oven for 15-20 minutes, or until the queso is bubbly and golden brown.
  10. Garnish with Chopped Cilantro, a dollop of Mexican Crema, and crumbled Cotija Cheese before serving.
