Instructions
  1. Preheat oven to 375°F (190°C).
  2. Prepare Chipotle Crema: In a small bowl, combine Mexican crema, minced chipotle pepper, and lime juice. Mix well and set aside.
  3. In a bowl, combine all Cheese Filling ingredients and mix well.
  4. Lay out tortillas and spread approximately 1/2 cup of the Cheese Filling down the center of each tortilla.
  5. Roll up each tortilla tightly and place seam-side down on a baking sheet.
  6. Brush the tops of the burrito logs with melted Butter.
  7. Bake for 20-25 minutes, or until golden brown and cheese is melted and bubbly.
  8. Let cool slightly before serving. Drizzle with Chipotle Crema and sprinkle with Cotija cheese.
