Flamin’ Hot Cheese Burrito Logs

A sophisticated take on the classic, featuring smoked gouda, habanero peppers for nuanced heat, and a creamy chipotle sauce for dipping.
Instructions
- Preheat oven to 375°F (190°C).
- Prepare Chipotle Crema: In a small bowl, combine Mexican crema, minced chipotle pepper, and lime juice. Mix well and set aside.
- In a bowl, combine all Cheese Filling ingredients and mix well.
- Lay out tortillas and spread approximately 1/2 cup of the Cheese Filling down the center of each tortilla.
- Roll up each tortilla tightly and place seam-side down on a baking sheet.
- Brush the tops of the burrito logs with melted Butter.
- Bake for 20-25 minutes, or until golden brown and cheese is melted and bubbly.
- Let cool slightly before serving. Drizzle with Chipotle Crema and sprinkle with Cotija cheese.
