Instructions
  1. In a large, heavy-bottomed pot or Dutch oven, melt Butter and Olive Oil over medium heat.
  2. Add Onions and cook, stirring occasionally, for 45-60 minutes, or until deeply caramelized and golden brown. Reduce heat if onions begin to burn.
  3. Add Beef Broth, Dry Sherry, Thyme, and Bay Leaf to the pot. Bring to a simmer and cook for 15-20 minutes to allow flavors to meld.
  4. Remove Bay Leaf. Season with Salt and Black Pepper to taste.
  5. Preheat broiler. Place French Bread slices on top of oven-safe bowls. Ladle soup over bread.
  6. Top with Gruyere Cheese and broil for 2-3 minutes, or until cheese is melted and bubbly.
