Instructions
  1. In a large, heavy-bottomed pot or Dutch oven, melt European-Style Butter and Duck Fat over medium-low heat.
  2. Add Onions and cook, stirring frequently, for 60-75 minutes, or until deeply caramelized and a rich, dark brown color. Maintain a very low heat to prevent burning.
  3. Add Sherry Vinegar during the last 5 minutes of caramelization.
  4. Deglaze the pot with Vintage Port, scraping up any browned bits from the bottom.
  5. Add Homemade Beef Stock, Thyme, and Bay Leaves to the pot. Bring to a simmer and cook for at least 30 minutes, or up to 1 hour, to allow flavors to meld.
  6. Remove Bay Leaves. Season with Fleur de Sel and White Pepper to taste.
  7. Preheat broiler. Place Sourdough Bread slices on top of oven-safe bowls. Ladle soup over bread.
  8. Top with Gruyere Cheese and Comte Cheese and broil for 2-3 minutes, or until cheese is melted and bubbly.
