Instructions
In a large, heavy-bottomed pot or Dutch oven, melt European-Style Butter and Duck Fat over medium-low heat.
Add Onions and cook, stirring frequently, for 60-75 minutes, or until deeply caramelized and a rich, dark brown color. Maintain a very low heat to prevent burning.
Add Sherry Vinegar during the last 5 minutes of caramelization.
Deglaze the pot with Vintage Port, scraping up any browned bits from the bottom.
Add Homemade Beef Stock, Thyme, and Bay Leaves to the pot. Bring to a simmer and cook for at least 30 minutes, or up to 1 hour, to allow flavors to meld.
Remove Bay Leaves. Season with Fleur de Sel and White Pepper to taste.
Preheat broiler. Place Sourdough Bread slices on top of oven-safe bowls. Ladle soup over bread.
Top with Gruyere Cheese and Comte Cheese and broil for 2-3 minutes, or until cheese is melted and bubbly.
