Add Onions to the skillet and cook, stirring occasionally, until deeply caramelized, about 12-15 minutes.
Add Apples to the skillet and cook for another 7-10 minutes, stirring occasionally, until slightly softened.
Sprinkle Brown Sugar, Cinnamon, and Thyme over the Apples and Onions.
Pour Apple Cider and Balsamic Vinegar into the skillet and stir to combine. Cook for 3-5 minutes, or until the sauce has thickened slightly and the apples are tender.
