  1. Cook Ramen Noodles according to package directions, but slightly undercook them. Drain well and set aside.
  2. In a bowl, gently toss the cooked Ramen Noodles with Taco Seasoning and Chili Powder, ensuring even coating.
  3. Prepare Chipotle Crema: In a small bowl, combine Sour Cream, minced Chipotle Pepper, Adobo Sauce, and Lime Juice. Mix well and set aside.
  4. Heat Vegetable Oil in a large skillet over medium-high heat.
  5. Place a slice of Monterey Jack and Pepper Jack Cheese in the hot oil. Immediately top with a portion of the seasoned Ramen Noodles, pressing down gently to form a taco shape.
  6. Fry for 2-3 minutes per side, or until golden brown and crispy. Repeat with remaining ingredients.
  7. Remove fried Ramen Tacos from skillet and place on a paper towel-lined plate to drain excess oil.
  8. Top with Shredded Cabbage, Pickled Jalapeños, Chopped Cilantro, and a generous drizzle of Chipotle Crema. Serve immediately.
